Good evening everyone! I hope you are all having a lovely St. Patrick’s Day! I had once again a hectic day at the hospital but I was determined to stick with tradition by making a tasty Irish dinner tonight. My Dad’s mother and father were Irish descendants so growing up that was one holiday we always seemed to celebrate and I have carried that into adulthood by incorporating nail art every year and cooking an Irish inspired dinner.
Tonight I want to share my nails first. This year I am loving my color combo! I started off with two coats of Merida by Zoya. This was a super-rich green jelly blend filled with holographic flecks (perfect for pulling in some rainbows into my mani). Next, I used Dourado by Le Femme with a stamping plate that had some cute four-leaf clovers image. I sealed it all with two coats of Liquid Marvel Top Coat by SuperChic Lacquer.
What do you guys think of this year’s St. Patrick’s Day look? I am in love! I especially like how at certain angles the four-leaf clovers are almost hidden… it makes me think of my childhood hunting for four-leaf clovers with my mom.
Now for my dinner tonight! Since my schedule is so hectic right now at the hospital and I am so exhausted at the end of it (yesterday I walked 7 miles and only sat down for my 30-minute lunch during my 11-hour shift) I wanted to take advantage of my Instant Pot. My mom got me one for Christmas last year and I have been experimenting. Tonight’s dinner was a huge success and has me loving my pot even more! For dinner I went with a Corned Beef recipe I found at Delish. Everything is cooked in one pot so not only was cooking a breeze, clean up was super easy! If you have an Instant Pot, I give this recipe a huge thumbs up! Best Corned Beef I’ve ever had!

Awwww! Thank you! I’m not a direct patient care person but I am essential to the supply chain and ensuring the nurses and doctors have everything they need. The next few weeks or even months will certainly be trying but I’m in it for the long haul!
